On a cold day like today one of my favourite evening meals, vegetable curry. So simple, carrots, courgette, red onion, broccoli, all chopped up into small pieces, then lightly simmer the veg in water for no more than 10 minutes so you retain all the nutrients of the vegetables. Drain the veg. Add coconut milk, tablespoon of curry powder, fresh ginger and little garlic. return everything to the pan and warm through for another few minutes, done, enjoy. Simple and so good for you.
